Ingredients
- 1½ cups (190g) all-purpose flour
- 3½ teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1¼ cups (300ml) milk
- 1 large egg
- 3 tablespoons melted butter
- 1 teaspoon vanilla extract
- Butter or oil for cooking
- Maple syrup and fresh fruit for serving
Instructions
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In another bowl, beat the egg, then mix in milk, melted butter, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir until just combined. A few lumps are okay – do not overmix.
- Heat a non-stick pan or griddle over medium heat and lightly grease with butter.
- Pour about ¼ cup of batter for each pancake. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes).
- Flip and cook the other side until golden brown.
- Serve warm stacked high with maple syrup and fresh berries.
Pro Tip: Let the batter rest for 5 minutes before cooking for even fluffier pancakes.
